# Method:
01 - Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving ½ cup (120 ml) of the pasta water.
02 - In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3 minutes until softened. Add minced garlic and cook for 1 minute more.
03 - Stir in the diced red and yellow bell peppers and sauté for 4–5 minutes until tender-crisp.
04 - Add the ground beef or vegetarian mince to the skillet. Cook, breaking it apart with a spoon, until browned and fully cooked, approximately 5–7 minutes.
05 - Incorporate tomato paste, crushed tomatoes, and broth into the skillet. Stir in chili powder, smoked paprika, oregano, cumin, salt, pepper, and red pepper flakes (if using).
06 - Allow the sauce to simmer for 10–12 minutes, stirring occasionally, until it reaches a thickened consistency. Adjust seasonings to your preference.
07 - Add the drained pasta to the skillet with the sauce, tossing to ensure it is evenly coated. If a looser consistency is desired, gradually add the reserved pasta water, a little at a time.
08 - Sprinkle the finished dish with grated Parmesan cheese and garnish generously with fresh chopped parsley or cilantro before serving.
